Semolina Pudding

This is one of the easiest and tastiest puddings that you can whip up at any time of the day, even late after dinner when the cravings hit hard or when the kids come home from school with an A and all you have prepared for them are healthy kale chips and carrot sticks.

5 cups cold milk

1 cup semolina

1 cup sugar

1 tsp vanilla extract (optional)

cinnamon to garnish

in a saucepan combine all ingredients except cinnamon, on medium heat stir constantly until it thickens to a pudding consistency. Either pour into individual serving bowls or pour into a large baking dish. Let cool, then transfer to the refrigerator for an hour or so. Garnish with cinnamon and serve. If you use a baking dish, cut the pudding up into triangles or any other shape and serve.
