Pita Bread Kebab

1 large pita bread, preferably day old

2 cups beef or chicken stock

½ pound of ground beef (if you have left over roasted chicken or a couple of burgers, use those instead of ground beef)

2 tsp olive oil

1 medium onion, diced

1 medium tomato, diced

½ cup of fresh herbs, chopped (parsley, cilantro, mint, tarragon- whichever you have at home)

2 cups of plain yogurt

1 clove of garlic, minced

2 tbsp tomato paste

1 tbsp olive oil

red pepper flakes

dried mint

salt and pepper to taste

Place the yogurt in a medium bowl, add the garlic and salt combine, set aside.

Heat oven to 375 F, toast the pita bread in the oven, take out cut to bite size pieces. At this point, we are done with the oven , you can turn it off. Place the pita bread on a serving platter.

Heat the olive oil in a medium pan, add the ground beef, saute, half way sauteing the beef add the onion and the tomato, season with salt and pepper, when everything is cooked and the ground beef is crisp remove from the heat, add the herbs.

Rewind, if you are using any other left over protein, omit the onion and tomato, just heat the meat up, crumble or shred it, if you want save the herbs to use as garnish at the end.

Heat the stock, pour over the pita bread.

Distribute the ground beef, or whatever protein you use evenly on the pita bread, cover with the yogurt garlic mix.

In a small sauce pan heat the olive oil, red pepper flakes and dried mint, pour over the yogurt.

Garnish with fresh herbs if you like and serve immediately.
