Eggs on Ground Beef

6 eggs

1 tbsp. Muratbey butter

1 pound Nema ground beef

1 large onion, thinly sliced

1 can RO*TEL diced tomatoes and green chilies

salt and pepper

In a large pan melt the butter and add the beef, sauté until the beef is almost cooked then add and sauté the onion until it becomes transparent and the beef is browned. Add the can of tomatoes, salt and pepper cook for another 3 minutes, until the liquid from the tomatoes is reduced , remove from the heat.

Make small beds for the eggs in the beef mixture, break the eggs into these beds, return to heat cover and cook till the egg whites are set. Serve immediately.
