Bulgur Salad -Kisir

2 cups of fine bulgur

3 ½ cups of boiling water

1 tbsp tomato paste

1 tbsp red pepper paste

½ red onion, thinly sliced

1 tsp salt

1 tsp red pepper flakes

2 large tomatoes, seeded and diced

1 English Cucumber, peeled and diced

3 scallions, thinly sliced

1 cup parsley, chopped

juice of a lemon

½ cup olive oil

½ cup pomegranate sours

Put the bulgur in a large bowl, pour the boiling water over, cover and let stand until the water is completely absorbed. Uncover add tomato and red pepper pastes, the red onion, salt and pepper flakes, combine everything using your hands, almost like kneading. Add the prepped vegetables and parsley. In a small bowl combine lemon juice, olive oil and pomegranate sours to form a dressing. Pour the dressing over the salad, mix. Transfer to a serving platter, enjoy! 

Kisir is enjoyed in every household all over Turkey. It is an indispensable dish of ladies afternoon teas accompanied by pogacas, cakes and cookies. In Antakya, an eastern Mediterranean town of my beloved country, kisir is served with a fried egg, which seems like a highly unusual pairing, but turns out to be very delicious.
