  • 4 Pastry Sheets
  • 2 eggs
  • 1 ½ cups milk
  • ¾ cup olive oil
  • 2 tsp baking powder
  • 1 cup feta cheese, crumbled
  • ½ cup parsley chopped
  • 1 tsp dried mint

Preheat oven to 200 F.

Grease a round baking dish slightly smaller than the pastry sheet. Spread one of the pastry sheets in the greased dish with the edges hanging from the side of the dish. Tear two pastry sheets into smaller pieces, place them in the baking dish.

Combine the cheese, parsley and mint, spread onto the pastry sheets evenly.

Beat the eggs, milk, oil and the baking powder together, pour half of this mix onto the cheese and herbs. Crumple the remaining pastry sheet to cover the cheese mix, then bring the edges of the bottom sheet to the top to create an envelope. Pour the remaining milk mixture on top.

Bake 25-30 minutes until golden brown.
