Pecorino Romano is a DOC cheese, produced under control of Consorzio per la Tulela del Formaggio Pecorino Romano. There are many other pecorinos made in Italy, but this one only applies to Pecorino Romano. The most famous producer of Pecorino Romano in the U.S. is Locatelli. They take at least nine months to age the cheese, which produces a hard and dense texture with a sharp flavor. It will be yellow in color with a dark brown paper rind that bears the company name on it. Locatelli Pecorino Romano is not just for pasta!
